Thanks. As you guessed I did Google it and was very surprised to find how extensively it is farmed, both in South America and Indonesia. Surprised partly because although there are several varieties none of them were familiar but mostly because of the extent of the farming in terms of tonnage shipped. I wonder why we don't have a similar variety here. Maybe we do under a different name. Flaky white fish is quite useful in some recipes and therefore sought after. Perhaps we do not have an appropriate climate. More likely because of our laid back, easy-lifestyle work ethic. Useless to speculate.
